Following the style of the traditional method of cooking from North Africa, this tagine is designed for slow cooking over the hob or over hot charcoal. The conical lid traps the steam produced in cooking and returns the condensed water to the food below to make it moist and tender. Suitable for cooking a wide variety of meats and vegetables, it has a capacity of about 2 litres, enough for 5 or 6 people. The fruit in the picture are young coconuts, grenadines and a cocoa pod - some of the wide variety of tropical fruits from the area in the Andes near where the cookware is made.
