Description
A tagine is a traditional Moroccan stew and it is also the name given to the shallow earthenware cooking dish with a tall, conical lid in which the stew is cooked.
The food is placed in the base. As it cooks, steam rises and is trapped in the lid, keeping the food moist.
Cooking with a tagine is similar to cooking with a pressure cooker or a slow cooker. Recipes for tagines are similar to those for meat, fish or poultry stews.
